A Chevalatta is a thin-gauge Italian sausage ring coiled into a continuous rope. Unlike standard links that use 32mm hog casings, Chevalatta uses a 22-24mm natural sheep casing. This smaller diameter results in a faster sear and a crispier snap. These rings are traditionally prepared whole and sliced into wedges after grilling.

Every ring in this pack comes pre-skewered by our butcher.The rings can be difficult to flip on a grill without uncoiling or breaking. Our skewers lock the coil in place, making sure the ring stays flat against the heat for a uniform, golden-brown crust.
