What is a Chevalatta Italian Sausage Ring?

A Chevalatta is a thin-gauge Italian sausage ring coiled into a continuous rope. Unlike standard links that use 32mm hog casings, Chevalatta uses a 22-24mm natural sheep casing. This smaller diameter results in a faster sear and a crispier snap. These rings are traditionally prepared whole and sliced into wedges after grilling.

6-Pack Convenience and Pre-Skewered Preparation

We ship our 8 lb. bulk packs frozen in 6 individual portions. This allows you to defrost exactly what you need for a single meal while the rest remains fresh in the freezer for up to 3 months.

Every ring in this pack comes pre-skewered by our butcher.The rings can be difficult to flip on a grill without uncoiling or breaking. Our skewers lock the coil in place, making sure the ring stays flat against the heat for a uniform, golden-brown crust.

The Frank and Sal Cooking Method

This is the standard way to cook a pre-skewered ring to ensure the casing snaps and the internal moisture is retained.

  • Defrost: Thaw one of the 6 individual packs in the refrigerator.
  • Pan Heat: Use a wide skillet over medium heat with a splash of olive oil.
  • Searing: Lay the pre-skewered ring flat. Cook for 7 to 9 minutes per side. The skewers keep the ring from curling during the process.
  • Peppers and Onions: Add sliced vegetables to the pan for the final 10 minutes to cook in the natural pork fats.
  • Resting: Remove from the heat and pull the skewers out. Let the meat rest for 2 minutes before slicing into wedges.
How is the 8 lb. pack shipped?
We use expedited Shipping Monday through Thursday. Every order is packed with dry ice in an insulated cooler. The 8 lbs is divided into 6 separate packs for easier storage in home freezers.
What flavors are available for the rings?
Our bulk packs are available in Cheese and Parsley with provolone, Fennel, Plain, Hot, Hot with Fennel, Broccoli Rabe, and Chicken with Cheese and Parsley.
