Understanding the differences between these varieties is key to authentic Italian cooking. Here are the essential cheeses we stock and how they differ:

  • Parmigiano Reggiano (DOP): Often called the "King of Cheeses," this cow's milk cheese is aged (usually 24 months) to create a hard, granular texture with tyrosine crystals. It has a complex, nutty, and savory flavor perfect for eating alone or grating.
  • Pecorino Romano (DOP): New York's favorite grating cheese. Made from 100% sheep's milk ("Pecora"), this cheese is significantly saltier and sharper than Parmigiano. It is the required ingredient for Roman pastas like Carbonara and Amatriciana.
  • Grana Padano (DOP): Similar to Parmigiano but with a slightly softer, more buttery texture and a milder flavor. It is an excellent all-purpose grating cheese that doesn't overpower delicate sauces.
