Most pasta is produced by mixing wheat from different countries to lower costs. Vallillo does not do that. This Fusilli comes from one farm in Puglia. They grow the wheat, mill it into flour, and make the pasta right on the property. Because they control the harvest, the wheat is naturally higher in protein. This provides a firm bite that does not get mushy or fall apart in boiling water.

If you touch this pasta, it feels like fine sandpaper. We use traditional bronze tools to shape it, which leaves the surface rough and porous. Cheap, mass-market pasta is usually shiny and smooth, which makes the sauce slide right off to the bottom of the bowl. This rough texture acts like a sponge, grabbing the sauce so every bite is coated.
