Handmade in the heart of NYC, our dough uses the simple, high-quality ingredients that define the NYC style: premium high-gluten flour, real New York tap water, olive oil, salt, sugar, and yeast. We mix the dough and freeze it immediately. This means the dough arrives fresh and ready for you to thaw, proof, and stretch exactly how you like it.
We offer two convenient sizes to fit any appetite or oven setup.
Ideal For: 10–12 inch personal pizzas. Serves 1–2 people.
Best Equipment: Countertop pizza ovens (Ooni, Gozney, Breville) or Cast Iron Skillets.
Ideal For: 14–16 inch family-sized pizzas. Serves 2–3 people.
Best Equipment: Standard home oven with a pizza stone or baking steel.
Since this dough is not pre-proofed, the thawing process is important. Place the frozen dough in your refrigerator for at least 12 to 24 hours. This allows the dough to thaw and slowly ferment (proof). Before stretching, let it sit at room temperature for 1 to 2 hours until it rises slightly and becomes soft.
High heat is key! Preheat your oven to its highest temperature (500-550°F). Using a preheated pizza stone or steel is essential for transferring heat quickly to the dough, creating that crispy, pizzeria-style bottom.
If the dough arrives partially thawed but still cold to the touch (below 40°F), it is safe to refreeze. However, for the best yeast performance, we recommend planning to use it within a few days of thawing.
