This is Asiago Stagionato, a mountain-made cheese aged for a minimum of 10 months. Unlike mass-market varieties, this utilizes unpasteurized milk to achieve a granular, brittle texture and high protein density. Sourced exclusively from the Altopiano di Asiago with the DOP seal of origin.

Market Notes

We personally oversee the flawless packing process in our Staten Island hub. Each wedge is hand-cut and vacuum-sealed to prevent oxidation. We prioritize expedited shipping to ensure the cheese maintains its viscosity and complex aroma from our cellar to your door.

This 10-month selection is straw-colored with small to medium eyes. Because the moisture content has dropped during the long aging process, the cheese is naturally brittle and easy to crumble. It is ideal for grating over hot polenta or served as a table cheese alongside sharp salumi.


Francesco’s Tip: This cheese is alive. Keep it wrapped in parchment paper inside a breathable bag in your refrigerator. If surface mold appears on the natural rind, simply scrape it off with a knife. The rind is not edible and should be removed before grating.
