Mazzetti Gold Label is a step above a sharp everyday vinegar without becoming as thick as a balsamic glaze. Made with more cooked grape must than wine vinegar, it has a smooth, medium body with gentle sweetness, lively acidity and notes of plum jam and sweet spices.
Simple balsamic vinaigrette: Whisk one tablespoon of Mazzetti Gold Label with three tablespoons of extra virgin olive oil. Add salt, black pepper and a small spoonful of Dijon mustard if desired.
Use a light hand and add it after grilled meats or vegetables come off the heat. Starting with a few drops lets the fruit, acidity and oak-barrel character complement the food instead of covering it.
