Fontal is a semi-soft cow’s milk cheese from Northern Italy. It has a smooth, creamy texture with a mild buttery flavor and a gentle nutty finish. Its moisture and supple texture allow it to melt evenly without overpowering the other ingredients in a dish.
Fontal is younger, milder and generally made with pasteurized cow’s milk. Fontina Val d’Aosta DOP is a protected raw-milk cheese produced only in the Aosta Valley and has a deeper, more aromatic alpine flavor. Choose Fontal when you want a creamy, versatile cheese that melts especially well.
Keep the cheese refrigerated in its vacuum-sealed package. After opening, wrap the remaining wedge tightly in cheese paper, parchment paper or plastic wrap and return it to the refrigerator.
