A good cannoli needs a shell you can taste through the cream. These imported Sicilian shells are a little thicker and less sweet than our traditional Frank and Sal bakery shells, with a crisp bite that pairs beautifully with our sweet cannoli cream.
That balance is what we like about them. You get the crunch of the pastry, then the soft ricotta filling, without the shell adding quite as much sweetness of its own. Choose the 3-inch minis for a dessert tray or the full-size 5-inch shells for a generous cannoli after dinner.

3 Inch Mini Cannoli Shells | 24 Shells | $29.98
A good choice when there are cookies, cake, and other sweets on the table. The smaller size lets guests enjoy a cannoli without committing to a full-size pastry.
5 Inch Large Cannoli Shells | 24 Shells | $32.98
Choose these when cannoli are the main dessert. The larger shell gives you more room for filling and makes a lovely plate with a cup of coffee or espresso.
Shell lengths are approximate. Each option is a separate box of 24, not a mixed-size assortment.
Our house-made cannoli cream with chocolate chips uses impastata ricotta, a thick, finely textured ricotta suited to pastry filling. It comes in four 1.5-pound pastry bags, 6 pounds total. Thaw the bags you need in the refrigerator and pipe directly into your shells.
Using our usual filling estimates, plan on roughly two 1.5-pound bags for 24 mini shells or three bags for 24 large shells. These are planning estimates: the opening of the shell and how generously you fill it will affect the amount. These imported shells may hold a different amount than our bakery shells, so keep a little extra cream available.
A light dusting of powdered sugar is plenty. Try your first one without it so you can taste how the less-sweet shell works with the cream.
KEEP UNFILLED SHELLS COOL AND DRY. DO NOT REFRIGERATE.
Dry storage is especially important. Moisture can soften the pastry and take away its crunch. Keep shells well sealed in their packaging or an airtight container, away from steam, humidity, and heat. A cool, dry cupboard is a good choice. Follow the best-before date on your package.
Fill close to serving time. Even a thicker shell will gradually soften as it absorbs moisture from the filling. Once filled with ricotta cream, keep cannoli refrigerated until you serve them. For a party, fill a small batch at a time and keep the remaining cream chilled.
Do they need baking or frying?
No. These are finished pastry shells, ready to fill.
Does less sweet mean sugar-free?
No. These shells contain sugar. They taste less sweet than our traditional bakery shells.
What is in the shells?
The manufacturer's label lists type 00 soft wheat flour, water, sugar, palm oil, cocoa, salt, cinnamon, and vanillin. The shells are fried in palm oil.
Allergen information: Contains wheat/gluten. The manufacturer advises that traces of sesame, almonds, pistachios, eggs, milk and milk derivatives, mustard, lupine, peanuts, and sulfur dioxide may be present. Check the package label before serving anyone with an allergy. Our cannoli cream contains milk.
