Frank and Sal makes this cannoli filling in-house with imported Italian sheep’s milk ricotta and mini semi-sweet chocolate chips. Sheep’s milk ricotta gives the cream a richer, fuller flavor than ordinary cow’s milk ricotta, while the chocolate chips give it the classic finish people expect in a good cannoli.
Each order includes 6 pounds of cannoli cream, packed as four 1.5 pound pastry bags. Thaw one bag when you need it, snip the end, and pipe directly into your cannoli shells.

This is a fresh dairy product and ships cold with insulation and cold packs. When it arrives, place the pastry bags in the freezer right away.
Snip a small opening in the pastry bag and pipe from the center of the shell toward each end. For the cleanest fill, keep the cream cold but give it a few minutes at room temperature if it feels too firm right out of the refrigerator.
