Prima Donna Maturo is a Dutch cow milk cheese aged until it reaches a firm, crystalline texture. It is specifically cultured to bridge the gap between a creamy Gouda and a sharp, piquant Parmesan. The maturation process creates visible white protein crystals and a deep, nutty flavor profile with a sweet finish.
We look for the "Maturo" designation because it signifies a longer aging period than the "Fino" variety. When we hand-cut these wheels, we check for a consistent, ochre-colored paste and a dry, intact rind. The presence of calcium lactate crystals (the "crunch") is the primary indicator of a well-matured batch. For the best flavor release, we recommend slicing this cheese at a room temperature of 68°F.
