Alps Sopressata is made using time-honored techniques that prioritize slow curing over speed. They use a coarse grind of premium pork to ensure a rustic texture that holds its shape when sliced. We have carried these in our New York market since 1989 because the quality remains consistent. These sticks are air-dried in natural casings, a patient process that allows moisture to escape naturally and concentrates the flavor into a firm, buttery bite.

  • Two Full Sticks: This set includes one Sweet (mild) stick and one Hot (peppery) stick.
  • Weight: Approximately 2 lbs. total. Because these are handmade, weights may fluctuate slightly due to natural evaporation during the cure.
  • Traditional Casing: Wrapped in natural casings to maintain the integrity of the meat during the aging process.
  • Flavor Profile: The sweet variety is balanced with garlic and salt, while the hot variety adds a vibrant pepper heat.

Market Notes

  • The White Dusting: If you see a white powder on the outside, do not worry. That is a natural part of the aging process for real air-dried meats. It is safe and can be wiped off or removed with the casing.
  • Storage: Store these in a cool, dry place. Once you cut into a stick, wrap the remaining portion in parchment or butcher paper and keep it in the refrigerator.

Francesco’s Tip

Always slice your sopressata on a bias. Before you serve it to the family, let the slices sit at room temperature for about 15 minutes. This allows the pork fat to soften, making the texture much more buttery and the pepper heat more vibrant on the palate. It is the traditional way to prepare a real antipasto plate.
