How to Prepare Canned Scungilli

Drain and rinse well before serving. LaMonica scungilli is ready to eat; it does not need to be boiled before you use it.

For Scungilli Salad

  1. Drain the can, rinse the scungilli well and let the excess water drain away.
  2. Toss with extra virgin olive oil, fresh lemon juice, sliced celery, chopped parsley and a little minced garlic.
  3. Taste before adding salt. Refrigerate until serving, then toss again and adjust the lemon or olive oil to taste.

For Scungilli with Marinara or Linguine

Prepare your tomato sauce first, then add the drained, rinsed scungilli near the end and warm it gently. Spoon over linguine or serve with crusty bread. Add crushed red pepper if you like a little heat.
